  • Recipe Highlight: Southern Spaghetti Carbonara

    Southern Spaghetti CarbonaraRecently, a Barefooter submitted a delicious sounding rendition of Spaghetti Carbonara and we were delighted to hear that it pairs well with Chardonnay - a summer favorite!

    For a nice summer dish with a great summer wine pairing, take a look at AngieMcG's Southern Spaghetti Carbonara and if you've got your own version of this great pasta dish - share it with us!

    Southern Spaghetti Carbonara

    Wine Pairing: Chardonnay

    Ingredients
    1 vidalia onion, or other sweet onion, chopped
    8 oz smoked bacon, chopped
    3 eggs, plus 2 egg yolks
    2 cups sweet grape or cherry tomatoes, cut in half lengthwise
    1 cup Barefoot Chardonay
    1/2 cup parmesan cheese
    1 package whole wheat or white spaghetti
    Pepper to taste
    Kosher salt

    Instructions
    Preheat skillet. Chop bacon and add to the skillet, and cook over medium low heat until the bacon has rendered all of its fat and it is crisp. Drain bacon on a paper towel or dish towel. Drain most of the bacon grease, reserving enough to coat the bottom of the pan, about 2 tablespoons. Cook pasta according to package directions. Drain pasta. Sweet the onions cooking over medium low heat in the bacon grease until softened. De-glaze pan with chardonay, and add tomatoes, bring to a boil, and reduce to a simmer. Whisk the eggs. Temper the eggs by adding a little of the simmering chardonay at a time to the eggs while whisking continually. Add the pasta to a large serving bowl. Add the onions and the tomatoes. Then add the eggs and toss until the sauce has thickened. Add cheese and mix well. The hot pasta will cook the eggs and melt the cheese.

  • Recipe Highlight: Barefoot Cabernet Salmon

    SalmonWe here at the Barefoot Republic are big fans of chowing down with a tasty dish and a glass of wine. Our very own Randy loves it so much that he has an amazing selection of drink and food recipes for you to browse, experiment, taste, and enjoy! As the days get hotter and the sunshine gets brighter, it's time to put away the bulky sweaters and throw on the lighter outfits. We've got some great recipes in the recipe section that are light but delicious to match your summer-perfect attire!

    Feel free to share your own twist on this salmon recipe or share your own favorite way to cook up a great piece of fish by submitting it to our recipe galleries! This Barefoot Cabernet Salmon recipe was submitted by patti129 cooked with a delicious wine sauce!


    Barefoot Cabernet Salmon

    Ingredients
    1/4 tsp. fresh squeezed lemon juice
    2 tbsp. olive oil
    1/2 c. Cabernet sauvignon wine
    1/2 c. beef stock
    1/2 c. chicken stock
    2 T chopped green onion
    2 tbsp. butter
    Salt & pepper to taste
    2 8 oz salmon filet

    Instructions
    Place green onions and wine in saucepan, reduce by 2/3. Add stock and reduce again by 1/2. Brush the salmon fillets with olive oil and season with salt and pepper. Place in 350 degree oven for 25 minutes. Heat sauce and slowly add butter until melted. Add lemon juice. Serve sauce over filets.

    The Barefoot Wine Beach Rescue Project is here in Huntington Beach, CA. We just wrapped up a great cleanup at Bolsa Chica State Beach. Many thanks to the volunteers who took time out to make Huntington Beach barefoot-friendly!

    We are gearing up for the celebration tonight at the Shorebreak Hotel featuring food, wine and music from Mason Jennings - It's going to be a great night!

  • Mason Jennings' "Sunlight" + Surfrider Foundation

    In partnership with Surfrider Foundation & Barefoot Wine, Mason Jennings, one of our Beach Rescue friends, is donating proceeds from his new track “Sunlight” to the Surfrider Foundation for the entire duration of the  Barefoot Wine Beach Rescue Project, from now until August 30, 2009!

    This brand new track comes from the recording sessions for his new album due out late summer 2009.

    So pick up a copy of Sunlight and know you are donating to a great cause. The single is available now on iTunes,  you can snatch it up here.

    If you are able we hope you will also come out to a Beach Rescue clean-up in a city near you. Mason will be performing at 4 of the clean-ups (Chicago, Seattle, Tampa) and this weekend in Huntington Beach!

  • Let's Keep Surf City USA Barefoot Friendly This Saturday!

    The Barefoot Beach Rescue is excited to kick off beach season and help keep them clean this year with all the upcoming fun Barefoot Beach Rescue events. In celebration of Surfrider Foundation's 25th Anniversary, Barefoot Wine and the Surfrider Foundation are rescuing, renewing and restoring 25 beaches this summer and the first one of the season will be at none other than Huntington Beach also known as Surf City!

    If you're in the area and want to lend a helping hand, make sure to RSVP to the Huntington Beach clean up at our Beach Rescue page. It's the only way to ensure a spot among the Beach Rescue crew AND attend a free celebration with special musical guest Mason Jennings! It's a great way to have fun and meet the other 48 Barefoot Republic members who have already RSVPed to help at the clean-up!

    Want to get to know Surf City a little more before the exciting event this Saturday the 13th? Here are a few fun tid-bits we've come across:

    • the beach is 8.5 mile-long and provides excellent waters for surfing
    • Bolsa Chica Ecological Reserve is a popular attraction where almost half the birds found in the United States have been seen at some time
    • Bolsa Chica State Beach is great for bare-handed catching California grunion, a species that spawns only on southern California beaches
