    Each week people tag their tweets with the hashtag #WineWednesday and it quickly becomes a trending topic. Wine Wednesday acts as a weekly celebration of wine. It is so fun!

  • Recipe: Yummy Chicken Enchilada Casserole

    CHICKEN ENCHILADA CASSEROLE

    Wine Pairing: Pinot Grigio

    Ingredients:

    1 cup milk

    1 cup sour cream

    1 can cream o' chicken soup

    2 cups chicken (more or less to preference)

    4oz can of chopped green chilies (more or less to preference)

    1 medium onion chopped?Seasoning (salt, pepper, garlic salt, parsley, etc) to taste

    Corn Tortillas

    Cheese

    Instructions:

    Preheat oven to 350 degrees.??Mix milk, sour cream, cream of chicken soup, chicken, chilies, onion and seasoning in mixing bowl.??Alternately layer mixture, corn tortillas and cheese in cooking dish (9 x 13 pan or 2 qt casserole dish) until all mixture is gone. ??Cook at 350 degrees for 30 minutes or until top layer of cheese has browned.

  • A Bubbly For All Seasons

    Ahh, it is the time for giving, sharing, festive gatherings and cracking open a bottle of bubbly! While the months between Thanksgiving and New Years Eve are the most popular for drinking champagne, we (like our good friend The Intoxicologist) believe that sparkling wine and champagne shouldn’t be saved for just the special occasions.

    As the recent Newsleader.com article says, “There is no reason not serve a sparkling wine with a dinner, no matter how simple or ornate the dinner may be.” That’s why we’ve created a whole line of unique sparkling wines such as our Bubbly Rosé,  our Moscato Spumante or even our Bubbly Pinot Grigio Champagne!

    So we’d like to challenge you this winter to enjoy a glass of bubbly even when you have nothing to celebrate. Trade in your regular glass of wine for something that tingles your taste buds.

  • Barefooter Recipe: Chicken Piccata

    Wine Pairing: Pinot Grigio

    Ingredients

    3/4 of bottle of Barefoot Pinot Grigio

    1 stick butter

    3 lemons

    1 sprig of oregano

    2 cups lemon juice

    chicken breast thin fillets

    1 cup flour

    1 cup bread crumbs

    2 eggs, beaten w/ 1 tbsp. of water?good olive oil

    Instructions

    Heat good olive oil in pan?dip thin chicken * first in flour, then in egg mixture, then in bread crumbs and fry till golden?Put chicken in 400 degree oven for 10-15 minutes till cooked all through?To make sauce, melt butter, add wine, salt, pepper, 3 lemons cut up and 2 cups lemon juice, one sprig of oregano, stir until lemons start cooking - pour over cooked chicken & ENJOY

    Hi Foot-Fans!

    Harvest is over and the vines are dormant, but we are far from done for the year!

    Our 2009 wines are beautiful and we are working on putting them in the bottle for you to enjoy!

    As we pass from 2009 to 2010, I hope you have a chance to celebrate the New Year with one of our Barefoot Bubbly California Champagnes. We offer 5 sparklers: from dry (Brut) to sweet (Moscato Spumante) and several in between. Be sure to ring in the New Year and ‘Get Barefoot and Have a Great Time!’

    We have many wonderful treats in store for you in 2010. Look for Barefoot California Pinot Noir and Riesling in 1.5L (double bottle) sizes in February. Other ‘toe’rrific treats to be revealed after we ring in the New Year.

  • Mulled Wine Recipe

    This recipe, submitted by one of our members, is for making delicious mulled wine using our very own Cabernet Sauvignon. This drink recipe will no doubt be a smash at your next holiday party!

    MULLED WINE

    Wine Pairing: Cabernet Sauvignon

    Ingredients

    1 bottle Cabernet Sauvignon

    2 cinnamon sticks

    6 whole cloves

    4 tsp sugar

    Instructions

    Add all ingredients to large, heavy bottomed sauce pan. Heat on low heat until warm and drink it by the fire. Or on the beach. I've also done this with Barefoot Zin with tasty results.
