Recipe Highlight: Barefoot Cabernet Salmon

Our very own Randy loves it so much that he has an amazing selection of drink and food recipes for you to browse, experiment, taste, and enjoy! As the days get hotter and the sunshine gets brighter, it's time to put away the bulky sweaters and throw on the lighter outfits. Barefoot Cabernet Salmon

Ingredients
1/4 tsp. fresh squeezed lemon juice
2 tbsp. olive oil
1/2 c. Cabernet sauvignon wine
1/2 c. beef stock
1/2 c. chicken stock
2 T chopped green onion
2 tbsp. butter
Salt & pepper to taste
2 8 oz salmon filet

Instructions
Place green onions and wine in saucepan, reduce by 2/3. Add stock and reduce again by 1/2. Brush the salmon fillets with olive oil and season with salt and pepper. Place in 350 degree oven for 25 minutes. Heat sauce and slowly add butter until melted. Add lemon juice. Serve sauce over filets.
