Barefoot Little Sips

Wine Pairing: Moscato

Ingredients

  1. Ingredients for Cupcakes:
  2. 1½ cups all-purpose flour
  3. 1 tsp baking powder
  4. ½ tsp salt
  5. 1 cup granulated sugar
  6. 1 stick butter
  7. 2 large eggs
  8. ¼ cup Barefoot Moscato
  9. ¼ cup milk
  10. Ingredients for Frosting:
  11. 1 8-oz container mascarpone cheese, softened
  12. 2 tbsp Barefoot Moscato
  13. 1 16-oz package confectioners’ sugar
  14. 1 tsp vanilla extract
  15. Shaved chocolate (for garnish)

Instructions

  1. Preheat oven to 350F. In medium bowl, whisk flour, baking powder and salt; set aside. In large bowl with electric mixer on medium-high, beat sugar and butter until light and fluffy, about 2 minutes. Add eggs, Barefoot Moscato and milk until just combined. Add dry ingredients; mix until smooth and fluffy. Divide batter evenly into 24 mini cupcake tins. Bake 15 minutes or until toothpick comes out clean. Cool 5 minutes in pan: remove from pan and cool on wire rack.
  2. Frosting: In small bowl with electric mixer on high, beat mascarpone cheese and Barefoot Moscato wine just until smooth. Gradually beat in confectioners’ sugar and vanilla until blended. Frost each cupcake with a small amount of frosting. Garnish with shaved chocolate. Makes 24.
