Barefoot Moscato Pumpkin Pie

Ingredients

  1. 1 (15 oz.) can pumpkin
  2. 1 (12 oz.) can evaporated skim milk
  3. 2 eggs, separated
  4. 1 teaspoon ground cinnamon
  5. 1/4 teaspoon ground nutmeg
  6. 1/4 teaspoon ground cloves
  7. 2 tablespoons Barefoot Moscato
  8. 1/4 cup brown sugar
  9. 1/4 cup honey
  10. 2 teaspoons vanilla extract
  11. 1 - 9 inch pie crust

Instructions

  1. Preheat oven to 400 degrees F.
  2. In a medium sized mixing bowl, mix together the pumpkin, milk and egg yolks. To this add the cinnamon, nutmeg, cloves, Moscato, sugar, honey, and vanilla extract.
  3. In another bowl, whisk the egg whites to soft peaks.
  4. Fold together both mixtures and pour into a 9 inch pie crust. Bake for 10 minutes, then reduce heat to 350 degrees F and bake an additional 25 to 35 minutes, until pie filling is set and pie crust edges are browned.
  5. Serve at room temperature.
