Chicken Piccata

Wine Pairing: Pinot Grigio

Ingredients

  1. 3/4 of bottle of Pinot Grigio Barefoot Wine
  2. 1 stick butter
  3. 3 lemons
  4. 1 sprig of oregano
  5. 2 cups lemon juice
  6. chicken breast thin fillets
  7. 1 cup flour
  8. 1 cup bread crumbs
  9. 2 eggs, beaten w/ 1 tbsp. of water
  10. good olive oil

Instructions

  1. Heat good olive oil in pan
  2. dip thin chicken * first in flour, then in egg mixture, then in bread crumbs and fry till golden
  3. Put chicken in 400 degree oven for 10-15 minutes till cooked all through
  4. To make sauce, melt butter, add wine, salt, pepper, 3 lemons cut up and 2 cups lemon juice, one sprig of oregano, stir until lemons start cooking - pour over cooked chicken & ENJOY
