Scallop Ceviche

Wine Pairing: Pinot Grigio

Ingredients

  1. 1/b scallops
  2. 1 TBSP butter salted
  3. 1/3 cup barefoot Pinot Grigio
  4. 1 TBSP capers add juice
  5. 2 tsp minced garlic
  6. juice from 1 lemon
  7. 1 tsp roasted garlic and herb seasoning
  8. pepper cracked over the top to taste
  9. sea salt to taste
  10. 2 tsp of your favorite olive oil
  11. olive oil Pam spray

Instructions

  1. no mess way to do it
  2. get a large piece of tin foil and make a basket like bowl spray the olive oil Pam on the bottom of the basket/bowl
  3. rinse and drain scallops and place into home made pot / basket like bowl you made out of the foil
  4. pour in the wine then then the olive over the top of the scallops in the bowl
  5. add the capers and juice, minced garlic, juice from lemon, sprinkle the roasted garlic and herb seasoning mix, salt and pepper
  6. finally hit it again with the Pam spray over the top.
  7. close up the ends of the basket to secure no leakage from the foil and place directly on grill
  8. scallops cook fast so when they turn directly white and your liquid starts to sizzle pull of grill
  9. if using an oven same idea set the oven at 350 and cook for 10 minutes check scallops and keep heating until the juice sizzles.
  10. serve into bowl and cut a baguette into 1 inch slices for dipping and enjoy.
